From Rosa's kitchen

The birria recipe comes from Rosa's grandmother in Ocotlán, Jalisco. The pot goes on at midnight and the meat comes apart by morning.

Rosa Delgado has cooked for her east Mesa neighbors for six years, first for birthdays and quinceañeras, now every weekend from her own kitchen. Small batches, the same three chiles, no shortcuts.
